Smothered cabbage is a staple down here in the South. You’ll find it on many menus any time of the year.
I don’t have many memories of my great-grandmother, but one is her cooking. She always had a big pot of something cooking.
She loved her mustard greens, but if she wasn’t cooking them you could bet she was cooking cabbage.
And the bacon fat… y’all better not even think of discarding any!
She would save that grease in whatever type of tub she had available. The secret to really yummy smothered cabbage is the grease. It can come from salt pork or bacon. Either way you’ll end up with the good stuff!


Ingredients:
1 head of cabbage about 3-4 pounds
1 cup diced bacon or salt pork
1/2 cup diced onions
1/4 cup minced garlic
Slap ya mama- to taste, start with 1 tsp
1/4 cup chicken broth (more if needed)

Directions:
Chop cabbage, roughly or however desired
On medium heat, cook down your bacon or salt pork
Add diced onions, cook down for about a minute
Add garlic, cook for about 20 seconds
Add cabbage and stir around
Add in a little chicken broth
Cover with lid and allow it to simmer
Add more chicken broth as needed
