Hey y’all—I’m Joy, but most folks know me as The Bayou Belle!
For years, this little corner of the internet has been where I shared my love for cooking, feeding people, and chasing flavor like it owed me money. And just so we’re clear—I’m still here. Still cooking. Still creating. Still finding joy in a kitchen that’s seen both celebration and survival.
In 2023, my life took a sharp left turn. After years of being very sick and getting the polite head-pats that come with “maybe it’s stress,” I was finally diagnosed with neuroendocrine peri-ampullary cancer—a mouthful, and sadly not the delicious kind. That diagnosis led to a Whipple procedure (pancreaticoduodenectomy), which is exactly as intense as it sounds.
I hoped that surgery would be the big fix. It wasn’t.
And in August 2025, I faced another major surgery in hopes of finally settling the chaos my body had been throwing for years.
But here’s the thing about me—I don’t stop living just because life gets loud.
I kept cooking. I kept sharing. I kept showing up.
Over time, The Bayou Belle grew into something deeper than recipes alone. This space became about resilience. About encouragement. About feeding your people when life feels heavy—and letting food be comfort, celebration, and connection all at once.

A Little Update — November 2025
I’m doing really well since my Whipple reconstruction, and I don’t say that lightly. This journey stretched me in ways I never expected—physically, emotionally, spiritually—but it also gave me a deeper gratitude for life on the other side of hard seasons.
As Thanksgiving rolls around, my heart feels especially full. I’m grateful for my family, my table, and the simple joy of gathering again. My hope is that the recipes you find here bring comfort, warmth, and a little extra love to your own table—because that’s what food is supposed to do.

My passion
The moment I found the courage to step back into the kitchen and start experimenting again, something inside me lit back up. Cooking didn’t just return—it reminded me how to live.

I love discovering flavors out in the world—but I can never leave them there. I bring them home, chasing the memories they hold and recreating them one bite at a time. Then cancer entered the picture, and everything changed: how I eat, how I cook, and even how I love.
