Easy Entertaining

It’s BBQ season. Summer’s knocking. Your people are ready to gather. And whether you’ve got a grill or not—baby, we’re still throwing a full backyard moment.

Everything here can be done in the oven or on the grill, and most of it can be prepped ahead. So when your guests show up? You’re pouring drinks… not panicking.

We’re keeping it light, cute, simple—and just a little show-off-y without trying too hard.

BUILD-A-PLATE STATION (YOUR SECRET WEAPON)

Host like you’ve got a little Southern swagger and zero stress. The trick is one main station where guests do the assembling for you. It keeps the line moving, the conversations flowing, and your kitchen a haven instead of a hurricane aftermath.

Start with the basics: warm pitas, a platter of chicken (pulled off the skewers and piled pretty), and a big bowl of sauce for dunking and drizzling. Add tongs for easy grab-and-go action.

Then let the fun begin. Layer in extras that scream “effortless abundance”:

  • Croissants for the folks who want flaky decadence

  • Chicken salad (yep — we love Ms. Rouses’) for a creamy, tangy option

  • Pimento cheese (Palmetto cheese does the heavy lifting) for spreadable bliss

CAJUN CHICKEN PITAS

Juicy, flavorful, and easy to love.

Ingredients

2.5 lbs chicken, cubed

1/4 cup olive oil

1/4 cup lemon juice

2 tsp Slap Ya Mama original seasoning

5 cloves garlic, grated

1 tsp thyme

1 tsp oregano

1/2 tsp rosemary

1/2 tsp paprika

1/2 tsp basil

Directions

Mix all seasonings, then add olive oil and lemon juice to form a paste. Toss the chicken until fully coated and marinate at least 30 minutes.

Grill over high heat for a quick sear, or bake at 350°F until cooked through, spreading the chicken out evenly.

Prep-ahead tip:

Marinate and skewer a few hours ahead. Cover and refrigerate until ready to cook.

TZATZIKI… WITH A LITTLE ATTITUDE

Cool, creamy, and just enough Cajun to keep it interesting.
Ingredients
2 cups Greek yogurt
2 tbsp grated cucumber (strain well—then strain again)
Fresh dill, to taste
1/2–1 tsp Slap Ya Mama white pepper blend
2 cloves garlic, grated
1/2 tsp vinegar
1 tsp lemon juice
Directions
Combine all ingredients and mix well. Let sit at least a few hours—overnight is even better—for full flavor.

SIDES THAT STEAL THE SHOW

Because sometimes the sides are the main event.

Cajun Butter

Ingredients

2 sticks butter, melted

1.5 tbsp Cajun seasoning

1 tsp garlic powder

1 tsp thyme

1/4 tsp rosemary

2 tbsp parmesan

Directions

Mix all ingredients until smooth. Use immediately or store for later.
Toss corn in butter mixture. Grill in foil pouches or bake at 425°F until tender with slight char.


Grilled Corn

Ingredients

5 ears corn, cut into bite-size pieces

1 cup Cajun butter

Potatoes

Ingredients

2 lbs Little Potato Co. savory herb potatoes

Seasoning pack

1 cup Cajun butter

Directions

Microwave potatoes until tender. Toss with butter mixture, then finish in oven or grill at 425°F until crisp.

Strawberry + Feta Salad

Ingredients

Fresh greens

Strawberries

Feta cheese

Balsamic glaze

Olive oil herb vinaigrette (Cousins dressing is my favorite)

Directions

Toss everything together just before serving.

SWEET THINGS (BECAUSE YOU DESERVE IT)

Macerated Strawberries

Ingredients

4 cups strawberries, cut

1/2 cup sugar

Directions

Combine and let sit about 15 minutes until juicy.

Serve over pound cake with whipped cream.

Prep-ahead tip:

Assemble pound cake portions early—add strawberries and whipped cream just before serving.

STRAWBERRY CROSTINIS (THE ONE THEY’LL TALK ABOUT)

This is the one people come back for.

Grilled Strawberries

Using berries from the macerated mixture:

Skewer strawberries and grill at 225°F (low heat) for about 10 minutes per side. Finish with a quick sear if desired.

Lemon Cheese Spread

Ingredients

1 block softened cream cheese (or ricotta—but add less lemon juice if you do)

1/4 cup sugar

2 tbsp lemon juice

Directions

Mix until smooth.

Assemble

Toast or grill baguette slices.

Spread lemon cheese mixture.

Top with strawberries.

Drizzle balsamic and finish with fresh mint.

This one’s light, fresh, and pretty enough to steal the spotlight.

🍓 Strawberry Fizzy Drink

Ingredients

3 cups strawberries, hulled and halved

1/8–1/4 cup swerve sweetener (to taste)

1/2 cup Simply Lemonade

Sparkling blush

Directions

Blend strawberries, sweetener, and lemonade until smooth. Taste and adjust sweetness.

Strain through cheesecloth. Pour over ice and top with sparkling blush.

Serve with a strawberry on the rim and just enough sparkle to catch the light.
