boudin balls
Ingredients:
1.5 lbs Boudin sausage (I know this may be very hard for people who don’t live in Louisiana. If you have a specialty sausage you love, try it with that! Boudin has seasonings in it as well as rice.)
1/2 cup flour
1 cup italian breadcrumbs
2 tbsp Slap Ya Mama original seasoning
2 large eggs
1/4 cup milk
1 tsp cayenne pepper
Oil for frying
Directions:
Heat cooking oil to 350
Remove boudin from the casing and place in a bowl
Line a baking sheet with parchment paper
Using a small cookie scooper, scoop the boudin and roll into balls
In a medium bowl, add the breadcrumbs, flour and slap ya mama
In another bowl, add the eggs, milk and cayenne- mix it up
Take a few balls at a time and roll it in the egg mixture
Then roll each ball into the flour mixture
Place carefully in hot oil and fry until golden brown
