bourbon bread pudding with bourbon sauce

  • Ingredients:
    8 large eggs
    2 cups packed brown sugar
    1.5 tsp cinnamon
    1 tbsp vanilla extract
    1/4 cup bourbon
    2 cups heavy cream
    2 cups milk
    8.5 cups cubed french bread (stale, or at least day old french bread)
    Sauce:
    2 cups heavy cream
    1 tbsp vanilla extract
    8 tbsp sugar
    1 tbsp cornstarch
    2 tbsp bourbon

    Directions:
    Preheat oven to 350 and butter a 11x13 baking pan
    Whisk eggs, sugar, cinnamon, vanilla and bourbon together in a large bowl
    Add heavy cream and milk and mix well
    Cut up the bread in cubes and place it in the egg mixture
    Allow it to sit for at least 15 minutes to absorb the liquid
    Pour mixture into the baking dish
    Cook for about 55 minutes, until set in the middle
    Sauce:
    Heat the cream, sugar and vanilla in a saucepan on high heat
    Whisk for 3 minutes
    Dissolve the cornstarch with the bourbon
    Whisk in bourbon mixture
    Cook until thickened
    Drizzle on top of cut slices of bread pudding
