broccoli and cheese soup

I am pretty sure if you follow my recipes you've heard me talk about our love for broccoli.  This is a classic soup that our whole family loves!
It is so creamy and filling. There is nothing fancy and it's easy to make in a jiffy on the stovetop. 


Ingredients: 

  • 2 lbs fresh broccoli florets

  • 2 medium onions

  • 2.5 cups carrots- cut into coins

  • 48 oz chicken broth

  • 4 cups cheddar cheese

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp avocado oil

  • 3 cups heavy cream

Directions: 

  • Heat up oil in pot

  • Add onions and sauté down

  • Add carrots and cook down

  • Add broccoli and chicken broth

  • Let it boil until broccoli is tender and falling apart

  • Add all other ingredients

  • Let cheese melt and stir it

  • If you don't like it chunky, you may want to use an immersion blender and blend it up a little

  • Let the cream simmer (stir!) so it will thicken.

  • Adjust any seasonings

  • Serve!!
