broccoli and cheese soup
I am pretty sure if you follow my recipes you've heard me talk about our love for broccoli. This is a classic soup that our whole family loves!
It is so creamy and filling. There is nothing fancy and it's easy to make in a jiffy on the stovetop.
Ingredients:
2 lbs fresh broccoli florets
2 medium onions
2.5 cups carrots- cut into coins
48 oz chicken broth
4 cups cheddar cheese
1 tsp salt
1 tsp pepper
1 tbsp avocado oil
3 cups heavy cream
Directions:
Heat up oil in pot
Add onions and sauté down
Add carrots and cook down
Add broccoli and chicken broth
Let it boil until broccoli is tender and falling apart
Add all other ingredients
Let cheese melt and stir it
If you don't like it chunky, you may want to use an immersion blender and blend it up a little
Let the cream simmer (stir!) so it will thicken.
Adjust any seasonings
Serve!!
