One of our favorite soups. It's simple, elegant, and makes for a warm tummy on a cool night.
Ingredients:
12 cups diced sweet potatoes
2 tbsp butter
1 1/4 cup celery diced
1 1/2 cup onion diced
6 cloves of garlic chopped
1tsp Tony's creole seasoning
1 1/2 tsp Emeril's Essence seasoning
1/4 tsp thyme
2- 32oz chicken broth
Salt and pepper to taste
1 pint of heavy cream
Directions:
In a large stock pot melt your butter
Add the onions and celery and sweat down for a few minutes
Add garlic
Add sweet potatoes, seasoning, and broth and bring to a boil
Blend up with an immersion blender
Add heavy cream and let it cook down
Adjust seasonings to your taste and enjoy!
