Chicken taco salad with chile ranch
3/4 lb thin chicken breast
1 tbsp taco seasoning
Salt <just a little sprinkle>
Romaine lettuce (you can buy the mix to make it easy, I like to buy the one with purple cabbage and shredded carrots)
Shredded Cheese
Black beans
Tomatoes
Tortilla chips
Rio Luna diced green chiles
Ranch Dressing
1 Pack of Ranch dressing mix
1 cup Mayonnaise
1 cup Milk
1 tbsp Rio Luna diced green chiles
Sprinkle of taco seasoning
Start by cooking your chicken
Heat some olive oil in a non stick skillet on medium-medium high heat
I buy the thinly sliced chicken breast, the one I used for this recipe was .76 lbs
In a bowl, mix taco seasoning with a little salt <unless the seasoning you are using already has plenty of salt>
Sprinkle evenly on each side of the chicken breast
Cook each side, allowing them to sear until completely cooked through
Set aside to cool
Mix Ranch dressing by mixing all ingredients in a bowl, place in the fridge until you are ready to use it
Assemble salad
Layer your lettuce on the bottom
Top with toppings
Chicken
Beans
Cheese
Tortilla chips
Tomatoes
Rio Luna diced green chiles
Top with the ranch dressing!
