mexi cajun grilled cheese
Makes 8 sandwiches
16 slices of white bread
1 can 14oz pinto beans (drained)
1/4 cup plain yogurt
1/4 cup salsa
1 can Rio Luna diced green chiles
2 cups shreded Mexican Cheese
1 tsp Slap Ya Mama
Butter
Mix everything, except the butter, in a bowl
Spread it on one side of the bread, and close it like a typical sandwich
Set aside and do these for all of them, as the sandwiches will cook quick
In a non-stick skillet, heat 1 tbsp butter on medium heat
<My skillet is about a 12”, so I can fit 2 sandwiches at a time>
Place sandwich in skillet with melted butter, if placing more than one, make sure you don’t overcrowd them
Once the one side is toasted, carefully flip to toast the other side
Repeat process until all sandwiches are toasted
