Pesto Portobello Panini
This is one of my favorite sandwiches to make! When we used to go to this local pizza shop, this was my favorite meal to get. It is light with onions and bell peppers, and my favorite mushroom.
Ingredients: Makes about 6 panini's
Ciabatta Rolls
Pack of 6-8 portobello mushrooms
1 large onion
1/2 yellow bell pepper
1/2 orange bell pepper
1 1/2tsp slap ya mama cajun seasoning
1/2tsp thyme
1/2tsp ground oregano
2tbsp chicken broth
5tbsp butter
Provolone cheese
Pesto
Directions:
Wash the portobellos
Slice them up about 1/2 inch thick
Slice the bell peppers and onions the same way
Melt the butter and add the onions
Cook for about 5-10 minutes, until translucent
Add the mushrooms and cook them down for about 5-10 mins
Add the bell pepper and cook another 5 minutes
Add all seasonings and adjust to taste
Assemble
Lay out your sandwiches
Spread mayonnaise on each side of the roll
Put 1/2 tbsp of pesto on each side of the roll
Place one piece of provolone on the roll
Put a heaping spoon of mixture on the roll
Put on a panini press or toast in oven
