squash casserole
Squash grows crazy amazing down here. If you want to start a vegetable garden, one thing you can always count on growing is squash!
As the summer comes to an end, I am always looking for different ways to cook squash. This was one of my recipes from last year. It's only spring and squash season is just kicking up, but it is one of our go to recipes for a dinner side dish!
Ingredients:
- 6-8 squash- about 5 cups chopped up
- 2 shallots
- 1 tsp garlic powder
- 2 tsp slap ya mama cajun seasoning
- 1 cup heavy cream
- 1/2 cup parmesan cheese (plus more for top)
- 1 tsp salt
- 1 tsp pepper
- Olive oil
Directions:
- Spray an 8x11 baking pan
- Heat oven to 450
- Cut squash into coins or desired size
- Dice shallot into small pieces
- In a large skillet, heat up olive oil
- Place shallots in the hot oil and cook down until softened
- Add the squash
- Add all the seasonings
- Cook down
- Add heavy cream
- Add parmesan
- Pour into baking pan
- Sprinkle more parmesan on top
- Cook for 15 minutes until golden on top
