Chicken Pesto Calzone
My husband and I used to go to this pizzeria and loved it. They had amazing pizza, great calzones, many little sandwiches and all sorts of Italian dishes. Well, so something happened and I can't go back there... I will post that story in the blog so you won't be grossed out while reading my delicious recipe. :) So I've had to learn how to make some of our favorite dishes from there, and this was my husband's all time favorite.

Ingredients:
- 1.5lb chicken tenders cut into cubes
- 1tsp ground oregano
- 1tsp salt
- 1/4tsp pepper
- 1tsp garlic powder
- Mozzarella cheese pearls
- Shaved parmesan cheese
- Ricotta cheese
- 2tbsp oil for cooking
Directions:
- Heat your pan and pour in the oil
- Place the chicken in the heated oil
- Sprinkle all seasonings on top and cook chicken until done
Make the Calzone
Use the pizza dough found here
- Roll out desired size for calzone (I use the device below to make mine, it is 6")
- 1tbsp of ricotta (or when your done filling, if you have more room you can try to put more)
- 1tsp pesto
- 3 balls of mozzarella pearls
- 3-5 shreds of parmesan
- Place in desired amount of chicken
- Bake on 500 for about 8-10 minutes (It depends on size and your oven, just watch it doesn't get too brown)
