Eggplant Parmesan

I did a poll on Instagram last week to see what my followers favorite eggplant dish was, and eggplant parmesan won by far!
It's one of our favorites too.
Funny thing is, I never really cooked it at home until one day… My kids were eating a bowl of spaghetti (just a traditional meat sauce) and I fried some eggplant on the side because they love it.
Well my son started dipping it in his spaghetti and told me how good it was like that. Then we had a long conversation about the dish called eggplant Parmesan.
Now it's a must have at home too!

Ingredients

1 cup diced onion
1 tbsp tomato paste
1 can diced tomato
2 tbsp garlic
2 heaping tbsp basil
15oz water
2 tsp salt
1/2 tbsp sugar

1 lb of pasta cooked according to the package

Place the fried eggplant medallions in the sauce and top with cheese, serve over pasta
