Mother's faux hog head cheese
This is a great way for people who don't want to eat "hog head" in this appetizer. It is still full of flavors that are right on point!
Ingredients:
- 1 small pork roast stuffed with garlic (2 cups of chopped pork)
- 1 small beef roast (rump) stuffed with garlic (2 cups chopped beef)
- Salt and pepper roast and cover with foil
- Bake them in the oven until meat is very tender and breaks apart
- Break meat apart in small pieces and set aside
- 1/2 cup chopped parsley
- 1/2 cup chopped green onions with tops
- 6 envelopes of knox unflavored gelatin
- 3 small loaf pans greased prepared and set aside
- 3 cups of chicken broth
- 1 to 3 tsp cayenne
- 1/2 tsp black pepper
- 2 1/2 tsp salt
- 1 finely chopped onion
- 3 bay leaves
- Cook the 6 ingredients above for 5 minutes or until mixture comes to a boil
- Add the gelatin and stir until it is completely dissolved
- Add chopped parsley and shallots and stir
- Add chopped pork and beef
- Pour into greased loaf pans and cover
- Refrigerate for a few hours before serving
