Onion Rings

Any time we go out to eat with my dad, he will always make sure to order onion rings if they are on the menu!  So, you can bet that I have a soft spot for onion rings.  We love to make these. They are so light and crispy and just downright enjoyable.

  • 2 large onions

  • 3 cups buttermilk (make your own if you don't have any)

  • 1/2 cup louisiana hot sauce

  • 1tsp cayenne pepper

  • 2tbsp slap ya mama cajun seasoning

  1. Mix this all up and soak your onion for about an hour in the fridge

  Batter

  • 2 cups all purpose flour

  • 2tsp baking powder

  • 2tsp slap ya mama cajun seasoning

  • Canola or Crisco for frying

  1. After you have soaked the onions for about an hour in the buttermilk, take them out and heat your oil to 375

  2. Mix your batter mixture in a bowl

  3. Take a few onion rings at a time, let them drip when you pick them up, and then batter them in the flour mixture

  4. Place a few at a time in your oil

  5. Fry about 3-5 minutes, turning half way through

  6. Take them out and place them on a wire rack and they will stay crisp until the rest are done
