shrimp puppies with spiced sauce
Hushpuppies are pretty popular around here. I mean, fried food platters are and they always come with hushpuppies.
One day my husband asked if we could make them with shrimp, and of course I was all about it because I love shrimp! He even came up with the dip for them.
Ingredients:
- 2 tbsp unsalted butter
- 1.5 cup yellow cornmeal
- 1/2 cup flour
- 1 tbsp baking powder
- 2 tsp sugar
- 2 tsp salt
- 1/2 tsp slap ya mama cajun seasoning
- 1/8 tsp garlic powder
- 1 tbsp diced jalapeno
- 1/4 tsp cayenne pepper
- 1 cup milk (whole)
- 3 large eggs
- 1/4 cup green onions
- 1 lb peeled deveined shrimp (16/20 count)
Cream Sauce:
- 3/4 cup mayonnaise
- 2 tbsp sweet relish
- 1 tsp crystal hot sauce
- 1/2 tsp cayenne
- 1 tsp garlic powder
- 2 tbsp green onions
Combine all ingredients in a bowl and mix well.
Directions:
- Melt butter in a medium sauce pan
- Add the shrimp and slap ya mama cajun seasoning
- Cook until the shrimp are pink
- When done, remove from heat and transfer to a cutting board
- Cut up the shrimp into bite sized pieces
- In a medium bowl sift your flour, baking powder, sugar, salt, cayenne and garlic powder
- In a larger bowl whisk milk, eggs, jalapeños, and green onions together
- Combine the wet and dry ingredients by folding them together
Cooking:
- Heat oil in a large pot or fryer
- Keep a thermometer on it because you do not want the temp going over 330
- In batches use a 2 tbsp scooper and carefully drop into hot oil
- Make sure you don't add too many at a time, because you don't want your oil to drop under 300
- Rotate them while cooking so all sides cook evenly
- Remove from oil when they are golden
