blueberry muffins
I love muffins. They’re great for breakfast and they’re great for a snack. So easy to grab and go! It’s what everyone needs in their life now. Try these big babies out!
Ingredients:
2 cups flour
1 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2/3 cup yogurt
1/2 cup whole milk
2 eggs
1 stick melted butter
1 tsp lemon zest
2 tsp vanilla
1 cup blueberries
Directions:
Heat oven to 350
Place oven rack in center
Line a 12 muffin tin with baking cups
In a large mixing bowl, whisk together yogurt, milk, eggs, butter, lemon zest and vanilla
In a mixing bowl mix flour, sugar, baking powder, baking soda and salt
Add the dry ingredients to the wet
Do not over mix, mix until just combined
Divide evenly into baking cups
Bake for 20-24 minutes until golden on top
