lemon drop muffins with lemon glaze

Lemon flavored treats when it is hot outside are my favorite!  
And boy is it hot outside already down here in South Louisiana.  I already have upper lip sweat... !!! 
So this heat wave made me want to whip up my lemon drop muffins.  
They are so fresh and the crumb and glaze just bring it over the top. Try it out! 


Ingredients: 
Crumb Topping

  • 1 cup flour 
  • 1 cup sugar 
  • 1/2 cup butter melted 

Glaze Drizzle 

  • 1 cup powdered sugar 
  • 3.5 tbsp lemon juice 

Muffins: 

  • 4 large eggs 
  • 2.5 cups sugar 
  • 1 cup oil (veg or canola) 
  • zest of a large lemon (about a tablespoon)
  • 3 tbsp lemon juice 
  • 1.5 tsp vanilla extract 
  • 2 tsp baking soda
  • 1 tsp salt 
  • 2 cups sour cream 
  • 4 cups flour 

Makes 36 muffins

Directions: 

  • Preheat oven to 375 
  • Make the crumb topping first- Mix all ingredients together and break apart with a fork- set aside
  • Mix eggs in an electric mixer until frothy 
  • Mix in sugar and oil, beat until creamy 
  • Mix in lemon zest, juice, vanilla, baking soda, salt 
  • Mix in sour cream 
  • Stir in flour until just combined

 

  • Fill muffin cups 3/4 full 
  • Sprinkle crumb top on top of batter 
  • Bake for 18 minutes or until toothpick comes out clean 
  • Let cool on a wire rack until completely cooled 
  • Drizzle the glaze on top (optional...)
  • If you like lemon, I suggest the glaze because its got a nice zesty lemon flavor
