chorizo potato quiche
Ingredients:
- 1 whole unbaked pie crust (deep dish)
- 1/2 cup onion diced
- 1 lb chorizo
- 1.5 cups diced potatoes (little cubes, about 1/4 inch)
- 1/2 tsp salt
- 1.5 cup heavy whipping cream
- 8 large eggs
- 2 cups shredded cheddar cheese
- 1/4 cup green onions
Directions:
- Preheat oven to 400
- Defrost pie shell
- Dice your onions and potatoes and set aside
- In a skillet, cook down your chorizo while breaking it up like ground meat
- Add onion and sauté down for a minute
- Add the potatoes and stir around
- Cook down for about 5-10 minutes
- In your pie pan, lay the chorizo mixture on the bottom
- Pour the cheese on top
- Break your 8 eggs in a large bowl and mix them very well
- Mix in green onions with the eggs
- Pour eggs on top of chorizo and cheese mixture
- Place in the oven and cook for about 40 minutes until eggs set
