Sausage and egg bake

This is my go to for when I know I want a warm filling breakfast but don't want to wake up and cook it! What do I mean? I cook it the night before.  It's easy to put together, bake, and place in the fridge... ready to heat and eat!  
I am totally not a morning person. I never have been. My poor dad.  Him being my alarm clock growing up probably took years off his life!
My kids wake up nice and early and expect to be fed immediately! I like having options like this over cereal and I think you will, too. 

Ingredients: 

  • 1 lb jimmy dean breakfast sausage 
  • 16 eggs
  • 1/4cup diced onion
  • 1/4 cup diced green bell pepper 
  • 12 pieces of bread 
  • Cheddar Cheese 
  • Green Onions 
  • Splash of milk or heavy cream
  • salt and pepper to taste 


Directions: 

  • Spray a baking pan 
  • Mix eggs in bowl with a splash of milk or heavy cream, add some salt and pepper 
  • Heat up a skillet and cook the jimmy dean sausage down
  • Put the onion and bell pepper in with the sausage and cook down 
  • Place 6 pieces of bread on the baking dish, covering the bottom 
  • Sprinkle sausage on top 
  • Pour half the egg mixture on top 
  • Layer another 6 pieces of bread on top (you may want to cut the ends off- sometimes it can dry out if you leave the ends on the top layer- or you can add a few more eggs) 
  • Sprinkle more sausage 
  • Pour the rest of the eggs 
  • Sprinkle desired amount of cheddar cheese on top 
  • Sprinkle green onions on top 
  • Bake- covered at 350 for 30 minutes or until eggs are set
