strawberry bread with vanilla cream drizzle
When I started working on these, I was attempting to make scones. Well, obviously that didn't work out for me! It turned into a happy accident, though. I enjoy it like a coffee cake. It is a sweet treat that you can have for breakfast or dessert.
Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 3 tsp lemon zest
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 10 tbsp cold butter cubed
- 1.5 cups fresh chopped strawberries
- 3/4 cups buttermilk
- 1 large beaten egg
- 1/4 cup reserved sugar
Directions:
- Preheat oven to 375
- Spray 12 inch skillet or use a seasoned cast iron
- In a large bowl combine flour, sugar, lemon zest, baking powder, baking soda and salt
- Mix
- Add cubed cold butter and cut with a pastry cutter or use a food processor
- Shape dough into a circle about 2 inches thick
- Cut into 8 triangles
- Arrange it in skillet slightly apart
- Brush with beaten egg and sprinkle with sugar
- Bake until golden- about 25-30 mins
