spinach, mushroom and Zucchini frittata
I love a frittata. To me, it is such a great breakfast. You can basically throw anything in the fridge into it. Veggies are my favorite in a frittata, because well, you hardly even know you're eating a vegetable- so why not!
Ingredients:
- 12 eggs
- 2-3 cups of spinach
- 1 cup diced zucchini
- 1 cup sliced mushrooms
- 1 cup shredded cheddar
- 1/2 cup diced onions
- 1/4 cup diced green bell pepper
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 stick butter
- 1 tsp slap ya mama cajun seasoning
Directions:
- Heat oven to 350
- In a large bowl beat eggs and set aside
- Melt 1/2 stick butter in a pan
- Add diced onions and diced bell peppers and sauté down until soft
- Add mushrooms and zucchini, cook down
- Add spinach and cook until wilted
- Add seasonings
- Mix cheese into eggs and pour on top of veggies in the skillet
- Stir around a bit to mix it
- Cook in oven for about 30 minutes or until it is done
