Chicken Parmesan... On every menu around, even if the place isn't Italian. Am I right? Yes. Because it is just a simple classic dish. It's easy to make at home to enjoy with your family any time.
Ingredients:
1 lb chicken, pounded thin and evenly
15.5 oz Roa's marinara (or any good marinara)
24.5 oz Mutti tomato puree (or any good pureed tomatoes)
2 cups sliced mushrooms
1/2 tsp salt
1/2 tsp pepper
Parsley for topping
Oil for frying
Batter:
1 cup flour
1 tbsp Slap Ya Mama cajun seasoning
Egg wash:
2 large eggs
1/2 tsp pepper
1 tbsp water
Breadcrumb mixture:
1 cup breadcrumbs
2 tbsp parmesan
Directions:
Heat oil in skillet to start frying chicken
While oil heats, set up your 3 bowls with the different mixtures
To batter the chicken:
Dip in flour bowl first
Dip in egg wash second
Dip in breadcrumbs last
Place battered chicken into hot oil and fry until golden
When the chicken is done, remove from skillet and set aside
Start sauce:
Add mushrooms and cook down until soft
Add seasonings to mushroom
Add marinara and tomatoes
Place chicken back into pot and cook down while covered (this will make the chicken really tender)
Add mozerella to the top of chicken, cover until melted
