chicken thighs in mushroom herbed white wine sauce
Ingredients: (serves 4 if using 1 thigh per person)
4 chicken thighs
2 tbsp canola oil
1 tsp slap ya mama cajun seasoning
1 tsp salt
1 tsp pepper
1 tsp rosemary
Mushroom wine sauce
1 tbsp butter
1 onion diced up
1 tsp rosemary
1/2 tsp thyme
1/2 tsp slap ya mama cajun seasoning
1 tsp italian seasoning
1 tbsp flour to thicken
1/2 cup white wine
1 cup chicken broth
1/2 cup heavy whipping cream
Directions:
Heat oven to 350
Heat 2 tbsp canola oil in dutch oven on medium high heat
Season the chicken on each side
Sear each side of chicken until golden brown
Remove chicken to plate and set aside
Drain the oil left in the pot
Melt butter and add onions, cook for about 2 minute
Add mushrooms and sauté down with the onions a few more minutes
Add the wine and get the brown bits off the bottom
Add the chicken broth
Add the heavy cream
Place the chicken thighs back in the pot
Cook on 350 for about 45 minutes or until chicken is done.
Check internal temp to make sure it is done and serve!
