chicken thighs in mushroom herbed white wine sauce

Ingredients: (serves 4 if using 1 thigh per person)

  • 4 chicken thighs

  • 2 tbsp canola oil

  • 1 tsp slap ya mama cajun seasoning

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp rosemary


Mushroom wine sauce

  • 1 tbsp butter

  • 1 onion diced up

  • 1 tsp rosemary

  • 1/2 tsp thyme

  • 1/2 tsp slap ya mama cajun seasoning

  • 1 tsp italian seasoning

  • 1 tbsp flour to thicken

  • 1/2 cup white wine

  • 1 cup chicken broth

  • 1/2 cup heavy whipping cream


Directions: 

  • Heat oven to 350

  • Heat 2 tbsp canola oil in dutch oven on medium high heat

  • Season the chicken on each side

  • Sear each side of chicken until golden brown

  • Remove chicken to plate and set aside

  • Drain the oil left in the pot

  • Melt butter and add onions, cook for about 2 minute

  • Add mushrooms and sauté down with the onions a few more minutes

  • Add the wine and get the brown bits off the bottom

  • Add the chicken broth

  • Add the heavy cream

  • Place the chicken thighs back in the pot

  • Cook on 350 for about 45 minutes or until chicken is done. 

  • Check internal temp to make sure it is done and serve!
