chicken thighs in mushroom herbed white wine sauce
Ingredients: (serves 4 if using 1 thigh per person)
- 4 chicken thighs
- 2 tbsp canola oil
- 1 tsp slap ya mama cajun seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 tsp rosemary
Mushroom wine sauce
- 1 tbsp butter
- 1 onion diced up
- 1 tsp rosemary
- 1/2 tsp thyme
- 1/2 tsp slap ya mama cajun seasoning
- 1 tsp italian seasoning
- 1 tbsp flour to thicken
- 1/2 cup white wine
- 1 cup chicken broth
- 1/2 cup heavy whipping cream
Directions:
- Heat oven to 350
- Heat 2 tbsp canola oil in dutch oven on medium high heat
- Season the chicken on each side
- Sear each side of chicken until golden brown
- Remove chicken to plate and set aside
- Drain the oil left in the pot
- Melt butter and add onions, cook for about 2 minute
- Add mushrooms and sauté down with the onions a few more minutes
- Add the wine and get the brown bits off the bottom
- Add the chicken broth
- Add the heavy cream
- Place the chicken thighs back in the pot
- Cook on 350 for about 45 minutes or until chicken is done.
- Check internal temp to make sure it is done and serve!
