chicken piccata
Chicken Piccata is a great family meal. It is very simple. Simple enough that you can make this during the week. It is basically a lightly battered and seared chicken breast with a light, lemony sauce on top. Surprise your family tonight!
Ingredients:
8 chicken cutlets
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/4 cup flour
2 tbsp canola oil
1/4 cup capers rinsed
1 tbsp chopped garlic
1 cup chicken broth
1/2 cup dry white wine
1/4 cup lemon juice
Lemon zest
Directions:
Heat pan on medium with oil
In a small bowl, mix salt, pepper and garlic
Season each side of the chicken cutlets with it
In a small bowl, place flour
Dip each cutlets in the flour, coat each side
Cook each side of chicken for about 3 minutes on each side until no longer pink
Remove from skillet to a plate
Add capers and garlic to pan, cook for about 30 seconds
Add flour and stir it around
Cook flour for 1 minute
Add wine, broth, lemon juice and zest, bring to a boil while whisking any brown bits on the bottom of the pan
Once thickened, return chicken to the pan or plate it and pour some sauce on top
