Shrimp Faux Joy

When locals talk about Jazz Fest, the first thing we really speak of is food. And one of the first dishes talked about is usually the Crawfish Monica dish. Everyone wants it, everyone wants to make it, everyone just has to have it!
I got these wonderful shrimp from Biloxi Shrimp Company just in time to fix my craving. I decided, why not replace the crawfish with shrimp. Personally, I love shrimp just as much, and it is also easier for you to find anywhere you are!

1 pound rotini pasta, cooked according to package

  • 1 tablespoon extra-virgin olive oil

  • ½ cup unsalted butter

  • 1 cup chopped yellow onion

  • 5 cloves garlic, minced

  • 4 teaspoons slap ya mama seasoning

  • 1 teaspoon blackened seasoning

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon cayenne pepper

  • 1/4 cup white wine

  • 1 2/3cups heavy whipping cream

  • 2/3 cup whole milk

  • 1 tablespoon fresh lemon juice

  • 1 pound shrimp

  • 1/2 cup sliced green onion

  • 1/4 cup chopped fresh parsley

  • 1/2 cup grated Parmesan cheese



  1. In a large bowl, combine cooked pasta and oil; toss well.

  2. Set aside.

  3. In a large Heavy bottom pan, melt butter over medium-high heat.

  4. Add onion; cook until tender.

  5. In a small bowl, mix slap ya mama, blackened seasoning, salt and cayenne.

  6. Sprinkle 1 tsp all over shrimp

  7. Add shrimp to pan and cook until just done, set aside

  8. Add garlic along with the remaining seasoning, cook for 1 minute.

  9. Add wine; cook until wine is almost evaporated.

  10. Gradually add cream, milk, and lemon juice; keep stirring until slightly thickened, about 5 minutes.

  11. Add shrimp back to the pan (save some for the top of the dish if you’d like a nice presentation) along with green onion, and parsley, mix

  12. Add reserved pasta; cook until heated through.

  13. Remove from heat.

  14. Add grated Parmesan, stirring until melted
