cajun pork with creole mustard sauce

One of my favorite cuts of meat to buy is pork. It is the best thing here for cooking on a budget! One thing I like to stock up on is pork loin.
For this recipe I cut the loin into medallions. They are seasoned and then pan fried. The gravy it makes is so divine you will want to lick your plate!
Ingredients:
2 tbsp canola oil
8 pork medallions (cut a pork tenderloin into little steaks)
1/2 cup diced onions
1 tbsp slap ya mama seasoning
2 tsp black pepper
1 tbsp garlic powder
1/4 tsp ground thyme
1/4 tsp ground oregano
1/4 cup dry white wine
1/2 cup heavy cream
2 tbsp creole mustard
Directions:
In a small bowl, mix the seasonings together
In a heavy bottom skillet heat the oil
Season each side of the pork chop
Cook chop on each side and move to a plate
Add onions to the pan and sautee them down
Once they are translucent, add the wine to the pan and scrape any brown bits off
Add heavy cream and mustard
Bring to a simmer and add chops back to the sauce
Adjust any seasonings to taste
If you need more liquid, add some more cream
Serve!
