Ingredients: 
2 lb pork loin (or go to my blog here to see how you can do this with a budget
1 cup diced onions
1 cup diced green bell pepper
Salt and Pepper
2 cups water
Cook on 350 for about an hour
Take it out and shred it in the pot with the onions and bell peppers

This is the fun easy part... Add any of your favorite BBQ sauces to the pork.  
I used to use Sweet Baby Rays, now I make my own. 
Most of the time, I use my Tangy BBQ Sauce, but if I am looking for a little more sweet than tang I go for the Apricot BBQ Sauce
