smoked sausage cheesy rice with broccoli
This new recipe comes from Richard’s Cajun Foods. I have partnered with them this month to bring you some easy Cajun eats!
I was so excited to work with this company since I grew up eating their sausage. My dad always loved sausage. It didn’t matter if it was breakfast and pan frying, or if it was thrown on the grill for dinner. I remember always seeing a package or box of Richard’s in our refrigerator.
So to say this is a brand I have come to know and love, might be an understatement. Richard’s Cajun Foods was founded in Church Point, LA in 1981. They use high-quality, premium ingredients and source as much as they can locally in Louisiana. Richard’s is the original Cajun sausage company in Church Point, and you can tell in the flavor!
We all look for an easy weeknight meal to throw together. Perks when it’s cooked in one pot! Am I right?! This meal is just that. Easy, tasty and one pot.
It is a very hearty meal with the rice and cheese, and you get your meat and veggies in there as well. The sausage gives the broccoli and rice the right amount of Cajun flavor.
So on nights you are running kids to baseball, working late, etc, think of this meal and give it a try!
SMOKED SAUSAGE & CHEESY RICE
YIELD: 6-8 SERVINGS
INGREDIENTS
· 16oz package of Richard's Premium Smoked Pork Sausage, sliced
· 4 cups rice, cooked
· 1 Tbsp olive oil
· 1 cup onion, chopped
· 1/2 cup red bell pepper, seeded and chopped
· 1/2 cup green bell pepper, seeded and chopped
· 2.5 cups broccoli florets, chopped into desired size
· 5 garlic cloves
· 1/2 tsp black pepper
· 1 tsp Cajun seasoning
· 1 cup extra-sharp cheddar cheese, shredded
DIRECTIONS
1. Heat a large skillet over medium-high heat.
2. Add the sliced Richard’s Smoked Sausage and onions. Cook for about 5 minutes until onion is tender and Premium Smoked Sausage begins to brown.
3. Add the red and green bell pepper and broccoli. Cover, reduce heat and cook about 5 minutes.
4. Add garlic and quickly stir around.
5. Add the cooked rice, Cajun seasoning, and black pepper. Combine well, cover and heat until rice is hot.
6. Add the shredded cheese and remove from heat. Stir in cheese until it’s melted.
