Pork chops with mushroom gravy
This has become one of my favorite ways to cook pork chops. Allowing them to simmer in the gravy makes them so tender. Then the gravy alone is so full of flavor. Put it over rice and add a veggie for a side and you've got a fantastic meal!
Ingredients:
For the pork chops:
- Oil for fryer
- 8 pork chops
- Slap ya mama to taste (local cajun seasoning)
- Salt and pepper
- 1 cup flour
For the gravy:
- 1/4 cup flour
- 1/3 cup onion cut into strings or diced
- 2 cups of mushrooms
- 3 cups chicken broth
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp thyme
- 1/4 tsp slap ya mama
- 2 tbsp minced garlic
Directions:
Fry pork chops
- Sprinkle salt, pepper, slap ya mama on each side of the pork chop
- Lightly flour each side of chop and place in hot oil
- Fry until golden on each side
- Set aside
Make the gravy
- Pour out most of the oil but reserve about 2 tbsp
- Put the onions in and cook them down
- Put in the flour and brown just a bit
- Add garlic
- Add chicken broth and all seasonings
- Put the pork chops back in and let them cook down until they are tender
