grillades and grits
Oh my! If you do not live in New Orleans and want to taste a little bit of it, this is the dish for you. It is so full of flavor. Tender meat, sauce full of all these flavors and spices, and over grits... a southern staple.
Doesn't get much better than this!
Ingredients:
Canola oil for frying
6-8 flattened round steaks
1 cup flour
3 tbsp slap ya mama cajun seasoning
sauce:
1 cup diced onion
1 cup diced celery
1 cup diced and seeded green bell pepper
2 tbsp flour
1 can 14oz diced tomatoes
2 cups beef broth
2 tbsp dry red wine
1 tsp slap ya mama cajun seasoning
1/4 tsp ground thyme
1/4 tsp ground oregano
1/4 tsp basil
2 tsp garlic powder
4 bay leaves
Directions:
First, fry the rounds steaks
Heat the pan with canola oil (enough to coat the bottom)
Mix 1 cup flour with 3 tbsp slap ya mama cajun seasoning
Batter each side of the round steaks and place into hot oil
Fry each side until golden
Remove steaks from the pan and set aside
Place onions, celery, bell peppers into hot oil
Cook down until soft
Add 2 tbsp flour to coat the vegetables
Add the diced tomatoes
Add the beef broth and wine
Cut the round steaks into strips and place back into pan
Add all other seasonings and allow it to cook down on low
Cook grits according to package
Serve over grits
