ground beef and bean flauta
Flautas are awesome. Don't you know?! Usually I make chicken flautas because it's a great way to use chicken leftovers. However, I always buy ground beef in bulk, so I have a ton of beef on hand to use up! This is a great weeknight meal. When you're bored with tacos, try these instead!
Ingredients:
- 18 corn tortillas
- 1 lb ground beef
- 16 oz can refried beans
- 7 oz hot tomato sauce
- 2 tsp cumin
- 1 tbsp chili
- 1/2 tsp paprika
- 1 tsp ground oregano
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 tsp garlic powder
Directions:
- Heat oven to 425
- Mix seasonings
- Use 2 tbsp per pound of meat
- Cook your ground beef, add all seasonings and tomato sauce
- Add beans and mix well
- Prepare your tortillas by wetting 4 paper towels (keep them together)
- Squeeze out excess water, and put two on the bottom
- Place 3 tortillas on top, and fold over the other two damp paper towels to bring them on top
- The tortillas will be sandwiched between the damp paper towels
- Heat them for 30 seconds in microwave
- Take the 3 out and place mixture and roll them up
- Place them seam side down on a baking sheet
- Repeat until filling is gone
- Spray the top of the flautas with cooking spray
- Cook until golden crisp (about 20-25 minutes)
