Classic Potato Salad
Great for a BBQ, potluck dinner, or just a regular ole' dinner. My dad is staying with us while he recovers from surgery, and this is one of his favorite dishes to eat. He really hasn't gained his appetite back, so I try to make sure to cook some of his favorites with his dinner. This is a classic version, nothing added to jazz it up. Enjoy!
Makes 6-8 servings.
Ingredients:
2 lbs peeled potatoes (I use yukon gold a lot, because I have it on hand, but red and russet work just fine)
1 cup bread and butter pickles
1/3 cup green onions chopped
2 boiled eggs
1/4 cup mayonnaise
1 tbsp mustard
3qts water
1tbsp salt
Directions:
Peel potatoes and put them in a pot with 3qts water and 1 tbsp of salt.
Bring to a boil and cook very good- long enough where the potatoes fall apart.
While your potatoes are boiling, in a bowl mix the mayo, mustard, green onions, chopped pickles boiled and peeled eggs. Put in the fridge.
When potatoes are done, drain them in a strainer and let cool.
When they are cooled, mix with mayonnaise mixture.
Put in the fridge until ready to serve.
