Fried Grit Cakes
Us Southerners love our grits. We also love fried food. So this is a happy little Southern marriage made just for your mouth. How bout that! Great side dish for dinner.
Ingredients:
1 cup quick cooking grits
4 cups milk
1 tsp salt
2 tbsp butter
1 tsp slap ya mama cajun seasoning
1/2 tsp pepper
1 tsp parsley
1/4 tsp crushed red pepper flakes
1/2 cup cheddar jack cheese
1/4 cup green onions sliced
Directions:
Cook grits according to directions using 4 cups of milk and 1 tsp of salt.
Remove from heat and add all other ingredients.
Place parchment paper in a 8X11 dish and spread the grits out in the pan.
Let cool for 3-6 hours
Prepare for frying:
Egg Mixture
3 large eggs
2 tbsp water
Breadcrumb mixture
3 cups Panko bread crumbs
1 tsp slap ya mama cajun seasoning
Canola Oil for frying (just cover the bottom of the pan)
In a bowl whisk together eggs and 2 tbsp water.
Place the bread crumbs and tony's seasoning in a separate bowl.
Cut out grits with a biscuit cutter.
Dip the grits cutout in the egg mixture and then into the panko mixture.
Oil should be 350 degrees.
Fry each side of grits until golden in color.
