Sliced Baked Sweet Potatoes with Pecan drizzle
Sweet Potatoes. So delicate. So sweet. So tasty. So many ways to enjoy them.
I've posted my stovetop version, so here is my sliced up and baked version! It has a nice sweet little sauce you drizzle on top to make them oh so fancy.
Ingredients:
- 3lbs of sweet potatoes (sliced into coins about an inch or so thick)
- 2 sticks of butter (1 1/2 for tossing potatoes in while you bake and then 1/2 a stick for your sauce)
- 1/4 cup maple syrup
- 1/2 cup brown sugar
- 1/2 cup pecans
- sprinkle salt
Directions:
- Slice up the potatoes into coins that are 1 inch in thickness
- Melt 1 1/2 sticks of butter and toss the potatoes so it coats both sides
- Bake for 25 minutes at 450
- Melt 1/2 stick butter in a pan
- Add the brown sugar, maple syrup and pecans
- Bring to a boil for a few minutes
- Once potatoes have baked for the initial 25 minutes, take them out and pour this sauce all over them
- Bake for 10 more minutes
