Cajun Fried Rice from a Louisiana Girl

I felt the need to put "Fried Rice by a Louisiana Girl" because well... I'm not Asian! There are a million different fried recipes out there from people who actually make it like the Asian fried rice you are used to.  This is my version and I love it because it reminds me of what my daddy used to make.  He, however, cooked his chicken in Cajun seasoning... I think that alone kicks it out of the Asian category, ha! I love it, I hope you love it too. 

Fun Fact: My mom loved country music. She loved music in general and loved to go to concerts. When I was a little girl, maybe 5, she took me to a concert. I believe it was someone like Vince Gill, or Garth Brooks. But she was most excited because the “Sanderson Farms singer” was going to be there. Now, I’ll never know who that singer is, because I can’t remember, and my mom can no longer tell me. From my research, I believe it is the Mandrell sisters, but can’t be quoted on that. It is, however, a memory that will stick in my head forever and I’ll remember my mom singing the tunes always.


Ingredients:

6-8 cups cooked white rice (day old is best)

2 large Sanderson Farms chicken breast cut into small cubes

1 tbsp Slap Ya Mama Cajun seasoning (more to taste, just be careful of the salt)

2 tbsp Sesame oil

2 tbsp Canola oil

2 cups onions diced

2 eggs

1.5 tbsp chicken Bouillon powder

2 tbsp Soy Sauce

1 cup Green Onions

Directions:

Cube up chicken into small cubes and season with Slap Ya Mama seasoning

Dice your onions, set aside

Chop green onions and set aside

Crack eggs in a small bowl, set aside

Measure your soy sauce and set aside

Heat your wok on medium heat and pour in the canola oil

Add the cubed chicken to the hot pan

Cook the chicken until done

Move to the side and add your onions, cook until translucent

Move to the side and add your eggs- stir them quick when you put them in

Add rice and add all seasonings

Add sesame oil and mix well into the rice

Adjust any seasoning to taste- if you want more salt but do not need the liquid from soy sauce, try a little sprinkle of Slap Ya Mama
