southern smothered squash

This is the way I grew up on squash. Well, when my grandmother or aunt cooked it. My mom, she would put sugar in it! Don't do that. Or I at least don't recommend it. I love a savory squash, not sweet. This is a classic staple down here. 

 

Ingredients: 

  • 6 slices large bacon cut into small pieces
  • 1/2 cup chopped/diced onions 
  • 8 cups thinly sliced squash 
  • 3 tsp slap ya mama cajun seasoning 


Directions: 

  • In a large pan, place cut up bacon 
  • On medium, cook bacon until it is crispy 
  • Places onions in the pan and cook them down until soft
  • Add all the squash and cover your pan 
  • It will release juices 
  • Cook until tender
