southern smothered squash
This is the way I grew up on squash. Well, when my grandmother or aunt cooked it. My mom, she would put sugar in it! Don't do that. Or I at least don't recommend it. I love a savory squash, not sweet. This is a classic staple down here.
Ingredients:
- 6 slices large bacon cut into small pieces
- 1/2 cup chopped/diced onions
- 8 cups thinly sliced squash
- 3 tsp slap ya mama cajun seasoning
Directions:
- In a large pan, place cut up bacon
- On medium, cook bacon until it is crispy
- Places onions in the pan and cook them down until soft
- Add all the squash and cover your pan
- It will release juices
- Cook until tender
