Iced oatmeal cookies

Both of my kids love oatmeal cookies.  So I decided to step it up a notch and make these classic iced oatmeal cookies one day. 
My son instantly fell in love and told me I had to name them Oatmeal Cookies 2.0 because 2.0 is the better version than the 1.0, which is what he calls my regular oatmeal cookies. HA!
He's such a silly boy, but smart, because these are better! 

Ingredients: 

  • 2 cups old fashioned rolled oats 
  • 2 cups AP flour 
  • 1 tbsp baking powder 
  • 1/2 tsp baking soda 
  • 1/2 tsp salt 
  • 1 tsp cinnamon 
  • 2 sticks softened butter 
  • 1 cup brown sugar 
  • 3/4 cup sugar 
  • 2 large eggs 
  • 2 tsp vanilla extract

Icing: 

  • 3.5 tbsp milk 
  • 2 cups confectioners sugar 


Directions: 

  • Mix together the butter and sugars well 
  • Add eggs one at a time
  • Add vanilla 
  • Mix the rest of the ingredients in a separate bowl 
  • Add to butter mixture slowly 
  • Using a small scooper (about 2 tbsp) Scoop out cookies spacing 2 inches apart 
  • Cook on 350 for 10 minutes or until done 
  • Cool on a wire rack 
  • Make Icing by adding milk and sugar together 
  • Quickly dip each cookies and shake off excess 
  • Let dry on a wire rack
