Here she is.
The cake that brought me to shame and my mother in law to tears of joy.
This is the first recipe she ever shared with me and came to teach me how to make it. She felt so bad for my husband when we got married because y’all, the kitchen was just where I made tea and left my purse. We literally ate lemon pepper chicken, a can of peas and corn like 3 nights a week, and ate out the rest of the time! She thought he’d starve. Well, obviously that didn’t happen.
My mother in law loves telling this story because it was horrible.
I had no clue about anything and especially about baking. She went to Walmart and bought a bundt pan so we could make this cake. We started and she told me to grease and flour the pan. I looked at her in disgust wondering why the hell anyone would put grease and then flour in a pan they were going to bake a cake in! So she explained to me to rub butter on the pan and then flour it, it helps with the sticking.
But see, at this point in my life, I don’t even think I comprehended that flour made a cake. All cakes came from boxes and that was that!
So anyways, this cake has stuck around for almost 15 years now, and nobody has starved!

Ingredients:
1 box devil foods cake mix
1 cream cheese 8oz
2 cups confectioners sugar
1 tsp vanilla
1 cup pecans
1 cup sweetened coconut flakes

Directions:
Preheat oven to 350
Toast the pecans and coconut flakes on a cookie sheet Watch close! Do not burn these, it just takes a minute
Mix devil foods cake mix as directed on box
In a stand mixer mix cream cheese, confectioners sugar and vanilla
Butter and flour a bundt pan
Add the pecans and coconut to the pan first
Add cake mix to pan
Dollop the cream cheese mixture evenly on top, it will fall to the middle while baking
Bake for about 45-50 minutes until done
