pecan banana bread
The smell y'all. It will fill your house. It will make everyone swoon while it is cooking. The aroma is hypnotizing. I love this bread, it never fails that it will be moist. Not only moist, but it is an easy bread to make which is always a winner in my book!
Ingredients:
3 extra ripe bananas
2 large eggs
1 1/4 cup brown sugar (packed)
3/4 cup vegetable oil
1/2 cup sour cream
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
3 tsp vanilla extract
1/4 tsp salt
1/2 cup chopped pecans
1 3/4 cups flour
1 tbsp ground flax *optional*
Directions:
Preheat oven to 350
Spray a 6x9 bread loaf pan
In a large mixing bowl, combine the eggs, sugar, oil and sour cream
Whisk until smooth
Mash the bananas with hands or in a separate bowl
Add to the mixer along with cinnamon, baking soda, baking powder, vanilla, salt and pecans
Add flour and stir until combined
Pour the batter into the pan
Bake for about an hour- may take up to 1 hour and 15 minutes, depending on your oven.
