lemon marshmallow iced cookies
Okay… Let me just start with a warning here. This icing, it’s sticky. Like really sticky. It’s marshmallow people, so you know, it’s going to give you a bit of sticky fingers.
Just feel like I need to put that out there before you make it and hate me.
However, you may still hate me after you make them, because you might not be able to stop eating them!
Eat it up!
Ingredients:
10 oz marshmallows
1/2 stick butter
1 tbsp lemon juice and zest from one lemon
1 tbsp confectioners sugar
Yellow food coloring- optional
Cookie Dough- I use Miss Jones confetti cookies, but you can make these cookies or these cookies
In a non-stick pan heat on medium-high
Melt butter and add marshmallows
Add lemon juice and zest
Add powdered sugar
Allow it to cool
Add yellow food coloring if you desire (I like mine yellow!)
Dip each cookie, one by one
Allow it to dry on a wire rack (Sprinkle now so it can set with the icing)
Even when dry they are a little sticky, but it should not run off the cookie
