sock it to me cake
My mom brought this cake over a while back that she had gotten from the local grocery store.
My family and I immediately fell in love and the rest is history. I knew I had to learn how to make this at home.
I am still working on a recipe, because I am not always a fan of starting with a box cake mix. 99.8% of the time, I do not have cake mix at home, so I get a bit aggravated when I look for recipes and they call for cake mix! I'll get right on that for y'all. :)
Ingredients:
- 1 box golden cake mix (duncan hines is what I used)
- 4 large eggs
- 1 cup sour cream
- 1/3 vegetable oil
- 1/4 cup water
- 1/3 cup of sugar
- 1.5 tsp vanilla extract
Streusel:
- 2.5 tbsp cake mix
- 3 tbsp brown sugar
- 3 tsp cinnamon
Icing:
- 1 cup confectioners sugar
- 3 tbsp milk
Directions:
- Open package of cake mix and put it in mixing bowl
- Reserve 2.5 tbsp cake mix in another bowl
- Add all ingredients listed above for the cake and mix well
- Pour into bundt pan
- Make streusel
- Pour the streusel all over top evenly
- Take a butter knife and swirl it all around so it goes into the batter
- Cook on 375 for 45 minutes or until done
- Make icing that goes on top
- Allow cake to cool on a wire rack
- When cool, drizzle the icing all over
- Serve!
