strawberry cream cheese pound cake

I love a good pound cake.  During strawberry season, I will usually make a pound cake, mash up some macerated strawberries and put it on top of the cake with some whipped cream.  I feel like that is heaven, and all is needed for a simple little treat.  Maybe that's because my parents did that growing up!  
Anyways, I saw this recipe posted on Taste of the South and knew I had to make it.  I've only changed a few things and I think you will love it! 

Ingredients: 

  • 2 sticks butter softened
  • 1 8oz package cream cheese
  • 3 cups and 1/4 cup sugar
  • 2 tbsp vanilla extract
  • 6 large eggs
  • 3.5 cups flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup heavy whipping cream
  • Strawberry Sauce mixture

Strawberry Sauce Mixture: 

  • 1 pint of strawberries cut in half
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp water
  • Directions: 
  • In a small saucepan combine all ingredients
  • Bring to a boil and let it thicken
  • Let cool in pan

Directions:

  • Preheat oven to 325
  • Spray 2 bread pans (7x5) 
  • In mixing bowl, beat butter, cream cheese, sugar, and vanilla until light and fluffy
  • Add one egg at a time
  • On low speed add the flour mixture alternating with cream mixture
  • Start with flour and also end with flour  
  • Spoon half the batter into each pan
  • Spoon 1/4 strawberry mixture down the center of the batter
  • Spoon the rest of the batter on top
  • Evenly pour the rest of the strawberry mixture on each loaf  
  • Take a butter knife and swirl your batter around
  • Bake for an hour and 10 minutes and check with a toothpick- it should come out clean when done
