strawberry cream cheese pound cake
I love a good pound cake. During strawberry season, I will usually make a pound cake, mash up some macerated strawberries and put it on top of the cake with some whipped cream. I feel like that is heaven, and all is needed for a simple little treat. Maybe that's because my parents did that growing up!
Anyways, I saw this recipe posted on Taste of the South and knew I had to make it. I've only changed a few things and I think you will love it!
Ingredients:
- 2 sticks butter softened
- 1 8oz package cream cheese
- 3 cups and 1/4 cup sugar
- 2 tbsp vanilla extract
- 6 large eggs
- 3.5 cups flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup heavy whipping cream
- Strawberry Sauce mixture
Strawberry Sauce Mixture:
- 1 pint of strawberries cut in half
- 1/4 cup sugar
- 1 tbsp cornstarch
- 1 tbsp water
- Directions:
- In a small saucepan combine all ingredients
- Bring to a boil and let it thicken
- Let cool in pan
Directions:
- Preheat oven to 325
- Spray 2 bread pans (7x5)
- In mixing bowl, beat butter, cream cheese, sugar, and vanilla until light and fluffy
- Add one egg at a time
- On low speed add the flour mixture alternating with cream mixture
- Start with flour and also end with flour
- Spoon half the batter into each pan
- Spoon 1/4 strawberry mixture down the center of the batter
- Spoon the rest of the batter on top
- Evenly pour the rest of the strawberry mixture on each loaf
- Take a butter knife and swirl your batter around
- Bake for an hour and 10 minutes and check with a toothpick- it should come out clean when done
