Lemon Squares

This is one of my favorite sweets.  The best part for me, it is so easy that my husband will make them while I am cooking something else! His family introduced me to these, as they are his granny's favorite.  It's a light treat that is sure to delight.


Ingredients: 
Crust: 

  • 2 cups all purpose flour
  • 1/2 cup powdered sugar 
  • 2 sticks unsalted butter, cut into cubes 


Filling: 

  • 4 large eggs
  • 2 cups sugar
  • 1/2 cup lemon juice
  • 1 tsp lemon zest
  • 1/4 cup all purpose flour
  • 1/2 tsp baking powder 
  • Powdered sugar for sprinkling on top 


Directions:
Preheat the oven to 350
Make the crust- 

  • Combine the flour and powdered sugar together
  • Add the butter, cut into cubes
  • "Cut" the butter into the mixture with a pastry cutter
  • Spray a 9x13 pan and press the mixture on the bottom of the pan
  • Bake for about 20-25 minutes, until lightly golden 


Filling- 

  • Whisk the eggs
  • Add the sugar, lemon juice and mix together 
  • Mix all other ingredients well then pour ontop the baked crust
  • Cook for another 25 minutes
  • Cool and then sprinkle with powdered sugar
  • Cut into squares
