Lemon Squares
This is one of my favorite sweets. The best part for me, it is so easy that my husband will make them while I am cooking something else! His family introduced me to these, as they are his granny's favorite. It's a light treat that is sure to delight.
Ingredients:
Crust:
- 2 cups all purpose flour
- 1/2 cup powdered sugar
- 2 sticks unsalted butter, cut into cubes
Filling:
- 4 large eggs
- 2 cups sugar
- 1/2 cup lemon juice
- 1 tsp lemon zest
- 1/4 cup all purpose flour
- 1/2 tsp baking powder
- Powdered sugar for sprinkling on top
Directions:
Preheat the oven to 350
Make the crust-
- Combine the flour and powdered sugar together
- Add the butter, cut into cubes
- "Cut" the butter into the mixture with a pastry cutter
- Spray a 9x13 pan and press the mixture on the bottom of the pan
- Bake for about 20-25 minutes, until lightly golden
Filling-
- Whisk the eggs
- Add the sugar, lemon juice and mix together
- Mix all other ingredients well then pour ontop the baked crust
- Cook for another 25 minutes
- Cool and then sprinkle with powdered sugar
- Cut into squares
